Netatalk is a convenient way of accessing the system files and folders of your Apple iPhone, without having to SSH onto your idevice. (Secure Shell or SSH is a network protocol that allows data to be exchanged remotely using a secure channel between for example your computer and your idevice).
It's an alternative free, open source implementation of AppleTalk for Unix systems and this jailbreak app let's you use standard Apple file sharing to connect to your iPhone.
Once installed, your iPhone should show up in Finder on your Mac as a shared device. From then on, it's a simple case of clicking on the icon and then 'Connect As' to connect to your iPhone either as a root user or mobile user. You can than easily browse the folders and files, and even drag and drop as normal. Care is required though as messing around with files that you have no idea about may mean a restore! Of course, you should make sure that you disconnect when finished.
Common reasons for connecting to your iPhone include copying theme files that are not available via Cydia directly to your idevice or editing some strings on a system file for example the 'Slide to Unlock' text on the lockscreen.
